*Put all the ingredients for the tacos into a bowl and knead for 5 minutes. Gather the dough, shape it into a ball then wrap it in cling film. Leave to rest for 2 hours.

*Cut the dough into 12 pieces. On a lightly oiled work surface, roll out the 12 dough balls into thin 2 mm discs.

*Cook each taco one by one for 2 minutes in a hot pan, turning regularly. The dough will puff up. Using a tea towel, press lightly to let the air out of the taco. Cook all the tacos and store them in a tea towel or aluminium foil.

*Prepare the topping: Mix the hummus with the beetroot. Set aside. Peel the avocados and cut them into small cubes. Mix with the lime juice. Set aside.

*Serve the tacos with a little hummus and add the filling, sprinkle with chopped coriander and a few slices of fresh chilli or chilli sauce.
